COCONUT MILK ICE CREAM

Base Recipe:

2 cans coconut milk; 2 Tbs. arrowroot powder; 1/2 cup agave nectar or sugar; 2 tsp. almond extract

Empty cans of coconut milk into a medium size saucepan. Whisk to an even texture. Pour 1/2 cup coconut milk into a small bowl and add arrowroot powder. Whisk until no lumps remain, while heating the saucepan's contents on medium heat. Add arrowroot mixture to saucepan and whisk on medium heat until mixture starts to boil. Turn off burner and remove from heat. Cool to room temperature and add almond extract. Chill if desired. Process in ice cream maker according to directions. Enjoy!!

This recipe is easily altered for full gustatory delight:  Like chocolate?   Melt 2-4 baking chocolate squares in the saucepan before warming the coconut milk.  Try other extracts for flavoring.  Fruits of any type can be pureed then added to the warm mixture. Have some fun with it!

Dee Koloski ND, LAc

Dr. Koloski is a 2001 graduate of the National College of Naturopathic Medicine (NCNM) in Portland, Oregon. In addition to completing the typical four-year course of study in the naturopathic doctoral program, she completed the certificate in homeopathy, which required 384 additional class hours and an additional 100 clinical hours under the direct supervision of homeopathic doctors. Dr. Koloski also earned a Master of Science of Oriental Medicine (MSOM) after a three-year course of study and is a Diplomate of Chinese Medicine through the National Certification Commission for Acupuncture and Oriental Medicine (NCCAOM). She passed both the acupuncture and Chinese herbal medicine board exams.

Dr. Koloski attended Mount Holyoke College as an undergraduate. She majored in biology and minored in chemistry. While at college, she played one season of lacrosse.

Her life prior to college revolved entirely around horses. She is a former 4-H member, graduate A from the United States Pony Club, competed in upper level 3-day eventing, and trained horses and riders in a variety of sports. She has a love for teaching and hopes to eventually return to teaching.

Dr. Koloski is working towards regulation of naturopathic doctors in the state of Colorado. Currently, she is serving as President of the Colorado Association of Naturopathic Doctors. She was the co-author of the 2005 and 2008 sunrise applications requesting regulation of naturopathic doctors which was submitted to the Colorado Department of Regulatory Agencies, and continues to dedicate a great deal of time towards this legislative activity.
